Saint-Chinian AOC "Donnadieu" by Domaine du Clos Bagatelle

Manual harvest of Grenache, Syrah and Cinsault from the schist soils of the estate's vineyards in the village of Donnadieu. These infertile soils store up heat during the day to be released at night. Manual harvest. The bunches are completely destemmed. Traditional fermentation followed by long maceration varying from 18 days (Grenache), 28 days (Syrah) and 31 days (Carignan and Mourvèdre). Ageing in casks.
