After birds ate the entire crop of 2018, Guillaume’s first release of a Saint-Péray was the 2019. Fruit is sourced from a high-altitude site near Les Rieux in which the domain owns 1.2 total hectares. This is a combination of two-thirds Marsanne and one-third Roussanne fermented in steel and spending six months in wood before bottling.
