The Vigneto du Lot Soave comes from a single south east facing vineyard on Monte Foscarino in the heart of the Classico area. The vines are grafted onto the old Rupestris Du Lot rootstock in order to produce a grape with higher concentration. Fermentation takes place in 30% new barriques and 70% used. The wine then stays on the lees for about six months with batonnage taking place every six weeks. Fining occurs over an additional six months in stainless steel vats in contact with fine lees.
