[Gini’s](/producer/gini) Salvarenza is one of the great wines of [Soave](/appellation/soave-doc). Utilising very old vines (some more than one hundred years old) from a small plot within the La Froscà cru, [Garganega](/grape/garganega) is hand harvested in fermented in oak where it spends around eighteen months in contact with its lees. No sulphites are added prior to fermentation, a process which Sandro Gini has honed since first attempting it in 1985. The result is usually a complex wine that stands up as one of [Soave’s](/appellation/soave-doc) great age-worthy wines.
