The Terrasses du Larzac has long been recognised as one of the great wine making sub zones of the Languedoc and in the 2004 this local understanding was nationally recognised with the granting of its own AOC status, formally breaking away from the Coteaux du Languedoc AOC. This recognition involved imposing land parcel boundaries, as well as specific production rules so as to guarantee top quality and reflect the terroir’s unique qualities. Wine production started with the Romans, but took off seriously under the influence of the Benedictine abbeys. More recently three generations of wine producers have made a huge contribution to the quality revolution in the Languedoc.
